Quick and Easy 5 Ingredient Pumpkin Loaf recipe
Is it fall if pumpkin isn’t involved!? I’m that person... the one that loves a theme and buys the seasonal plates, table linens, bake-ware... you name it, it’s in my cart. On a recent trip down the rabbit hole, that is Pinterest, I stumbled upon this Pumpkin Harvest Loaf Pan, by Nordic Ware, and my fingers just couldn’t resist adding it to my cart! But, because I’m me and I love a deal, I decided to hold off and see if I could find a better price and before I had a chance to purchase it myself, one of my friends surprised me with the pan and some other fun fall baking goodies from Sur La Table. What I love most about the mold of this pan is that it creates a pumpkin shaped loaf that’s the perfect focal point for any fall table spread .
But back to the best part … The Pumpkin Loaf ! This recipe is so good and easy that you’ll definitely end up making this a couple times before we head into winter. Ever since I discovered this recipe on Pinterest, 5 years ago, it’s been a staple in my fall cooking repertoire. This quick and easy 5 ingredient recipe is perfect for the non baker and experienced baker alike, who’d like to spend less time in the kitchen and more time enjoying what they’ve made with friends and family!
5 Ingredient Pumpkin Loaf Recipe
Ingredients :
1 box of yellow cake mix ( GF for me)
1 16 oz can of pumpkin purée
2 eggs
1-2 tsp of cinnamon
1 tsp of nutmeg
Instructions
Preheat oven to 350 degrees F (175 degrees C). Spray loaf pan with a cooking spray .
In a large bowl, mix together the yellow cake mix, pumpkin,nutmeg, cinnamon and eggs. Beat until well blended. Pour in to the loaf pan.
Bake in the preheated oven for 45 minutes.
